Eating healthy is a challenge for many especially when you have a busy schedule. Here is one of my favorite meals not only is it delicious it's quick and easy to prepare taking less than 15 minutes!
Shrimp Stir-Fry
Ingredients:
1 bag of frozen stir-fry vegetables (any variety you prefer you will find them in the frozen food section at any grocery store)
1 bag of large shrimp, peeled and deveined
2 cups of fresh or canned pineapple
2-3 Tbsp. of low sodium soy sauce
1 tsp. of garlic, chopped
Directions:
Coat a large skillet or wok with about a tbsp. of olive oil (you can use nonstick spray) add vegetables. Cook over medium heat, stirring occasionally until vegetables start to thaw (should take about 5 minutes). Add thawed shrimp, garlic, pineapple, and soy sauce to skillet with vegetables. Continue to cook until shrimp is pink and tender.
This will make about 4 servings, you can serve shrimp-stir fry with 1 cup rice.
If I have time I will season shrimp the night before and let it marinate.
Directions to marinate:
In a large bowl season shrimp with a little ground black pepper and Adobo (very little) add 1 tsp of olive oil, 1 tbsp low sodium soy sauce, and 1 tsp garlic mixing it together. Cover then put in refrigerator overnight. Sometimes I add fresh ginger for a kick!
